Corn Bread Frittata



This morning I wanted something other than oatmeal (or hot dogs!!!) to eat for breakfast, so I took a look in the fridge and realized we had almost an entire pan of cornbread left from last Sunday, which was still good. I crumbled it up into about 4 eggs and maybe a 1/4 cup of milk, poured it in a hot skillet, threw on the lid, and made myself a frittata. It was actually pretty tasty, and firmed up nicely, so that I could eat it as a snack later in the day, too, after working on my new reclaimed concrete patio (a project that will be taking over my life, I suspect).
