Halibut, Potatoes, and Bok Choy
After falling for the fig wrapped fish recipe I learned by watching Michael Pollan on Martha Stewart, I decided to do it again with some Halibut we bought from Loki Fish Co at the farmer's market, and it worked perfectly. I made the recipe my own, by making a little honey soy sauce to marinate the fish before baking.
I paired that with some roasted potatoes, and some bok choy cooked in the remaining marinade, fish sauce, and chili. I was excited when I noticed the bottoms of the bok choy, which I chopped off, looked just like little roses, so I used them as garnish.
