Kaua'i Cod



Dan also handled dinner tonight, which was one of his picks from his favorite cookbook anyway - so it worked out great. The fish market didn't have sole, so he went with a cod for the recipe, which mixes buttery breaded fried fish with buttery avocados and buttery macadamia nuts, for a very delicious, almost rich fish dish. Dan did a great job, as always, in making dinner for us.

Kaua'i Cod
1 lb cod, cut into 4 pieces
2 Tbspn lime juice, divided in half
Flour
4 Tbspn butter
1/4 cup heavy cream
1 avocado, peeled and sliced
1/4 cup coarsely chopped macadamia nuts

Season fish with salt and pepper, and 1 Tbspn lime juice. Let stand 10 minutes. Dredge with flour. Heat butter in a skillet on medium heat. Saute fish in butter for 3 minutes on each side, until nicely browned. Move fish to a platter, sprinkling the fish with the other Tbspn of lime juice. Keep warm in the oven on low. Add cream to the pan and bring to a boil, scraping bottom of the pan to free brown particles. Spoon over fish. Top with avocado slices and mac nuts.
