Beef with Broccoli & Shiitake Mushrooms



Tonight we made yet another recipe from Quick & Easy Thai Cuisine: Lemon Grass Cookbook, using some great flatiron steak from Skagit River Ranch and Jumbo Shiitake mushrooms from Cascadia Mushrooms to make a favorite of Dan's: Beef with Broccoli. We added some red pepper flakes to spice it up a bit, but could've used more.

Beef with Broccoli & Mushrooms
2 cloves garlic, minced
1 egg
2 Tbspn sugar
1/8 tspn white pepper
1 tspn sesame seed oil
1 Tbspn rice wine (mirin)
1 Tbpsn cornstarch
2 Tbspn fish sauce
1/2 lb thin sliced beef
2 Tbspn oil
1/2 lb broccoli, chopped
1/4 cup Shiitake mushrooms, sliced thin
2 Tbspn oyster sauce
1 Tbspn red pepper flakes

Whisk together garlic, egg, sugar, white pepper, sesame oil, rice wine, cornstarch and fish sauce in a medium bowl. Add thinly sliced beef and allow to marinate for 20 minutes. Heat oil in a skillet or wok over medium high heat. Stir fry beef and marinade until beef is almost cooked. Add broccoli, mushrooms and oyster sauce to pan. Continue to cook until broccoli is bright green and tender. Serve over rice.
