Nachos!



If I hadn't been struggling with pain this week, I'd considered going out on the town tonight to celebrate the 200th birthday of Abraham Lincoln. Several friends are dressing up as Abe again this year, and going on a bar crawl. I'm sure they'll be having a blast, but I'm still far too tired and achey for those sorts of shenanigans.

So tonight we're staying in, watching Top Chef on Tivo, and enjoying some nachos made from a bunch of leftover ingredients from the week.

I love nachos, but when you get them at a bar or restaurant, some of the chips have no cheese or toppings on them at all, while others are so buried that they're soggy by the time you excavate them out. So when we make nachos, we often make it as a dip, and tonight was no exception. A layer of beans, then cheese, then salsa, put in a baking dish and warmed in the oven at 350. Then some red onion and green onion on top, then back in the oven under the broiler until the cheese was bubbling. Finally, shredded lettuce, more red & green onion, and guacamole on top. Served next to a bowl of crispy tortilla chips and a spoon for serving up.
