Salmon, Potatoes, and Fiddlehead Salad



Thanks to our return to shopping at the Farmers Market this week, we had a very fresh, very local dinner tonight featuring a steamed Keta Salmon Fillet from Loki Fish Co., roasted Red Potatoes from Olsen Farms, and a salad of steamed Ladyfern Fiddleheads from Foraged & Found Edibles, with a little bacon and lemon.

I over-steamed the fish & ferns a bit, but they were still good. The ferns are a little bitter, but no more so than a mixed green salad might be - and the lemon and bacon offset that. I probably never would've thought to buy fiddleheads, had Jason not introduced us to them at the Memento Meal potluck, so I'm thankful that he did.
