
Tonight's dinner was bacon wrapped scallops, on a bed of angel hair pasta. I didn't want to overcook the scallops and make them chewy, so I started by laying the bacon out on a cookie sheet, putting a second cookie sheet on top of them (so they were sandwiched flat between the two), and placing it under the broiler for 5 minutes or so. That began cooking the bacon, but left it still soft enough to wrap around the scallops (and secure with a toothpick). Then I seasoned them, and placed them in a skillet on high heat to quick sear the scallops on both sides. After removing the scallops, I melted some butter in the pan, scraping up the fond, and poured the browned butter over the pasta before topping it with the scallops.
