Lamb Curry



When I got home tonight, I got started on prepping ingredients to make muffins tomorrow morning for a work event... and, as a result, ended up not giving our dinner the attention it deserved.

I tossed potatoes and lamb meat (both from Olsen Farms) in our big cast iron pot, along with a can of coconut milk, a bunch of curry and spices, carrots, red peppers, and onions, and then threw it in the oven for an hour at 325.



The result? Overcooked lamb, and a curry with almost no flavor at all. The coconut milk was something we bought on sale, and it seemed runny when I poured it in - and I didn't taste it at all in the dish. I think a spice blend I used were too old, also, so I should toss it and stick to the mixing my own.
