When planning meals for this week, we took into account leftover items we had in the fridge & freezer - including 1/2 lb of pork, a packet of guacamole, green onions, and a bunch of spicy cheddar cheeses. So taco bar seemed like an obvious pick.
I cooked up the pork with spices, onion and garlic, and we paired it with some pinto beans, rice, shredded lettuce, a pico de gallo sauce of chopped onions, green onions, tomatoes and cilantro, and corn tortillas.
