Chicken Salad Croissants & Cherries



Since we're heading out of town soon, we planned a week of very simple dinners - to give us time to clean up and pack in the evenings. Tonight we had some chicken salad sandwiches on croissants that we made up last night using chicken breasts that I pan roasted Monday night, then chilled overnight. I chopped it up, mixed it with some mayo and lots of tarragon, and spooned it onto croissants.

And to go with it for dinner, we had the first cherries of the season from Lyall's Farm in Mattawa, WA - a little bit East of Yakima.
