Chicken Quesadillas

Dinner this evening was a new take on chicken quesadillas - starting with marinating the cubed chicken breast meat in lemon & lime juice, plus some juice from a jar of pickled jalapenos and a healthy sprinkling of chili powder. I let that sit while I prepped all the other ingredients, including cooking down onions and red bell pepper with garlic, shredding three types of cheeses (Monterrey Jack, Cheddar and Mozzarella) and cooking up some beans and rice. Then I cooked the chicken in the marinade liquid, adding some sliced chili pepper. Once all the fillings were done, I layered them on a flour tortilla on a baking sheet, and put them under the broiler until the cheese was melted.
