Chick'n Quesadillas

Tonight, after a round-trip to Tukwila to pick up acrylic champagne glasses from our new favorite store, we whipped up some chicken/chick'n quesadillas with roasted red peppers, pepper jack cheese, and guacamole & chips on the side. And we had a Corona to go with them, it being Cinco de Mayo and all.

Dan bought some 'chilies' to go in the quesadillas, which turned out to be habaneros, so we opted to leave them out. I cut off a tiny little piece and tasted it, and had to swish some beer in my mouth to cut the acid. Now Dan knows that the orange peppers, though pretty, are super hot. He smartly suggested we mix them with some pineapple for a nice salsa in the future.
