Tonight's dinner was really late (almost past our 9pm bedtime), thanks to my acupuncture appointment. But when I got home, Dan was already busily creating the sauce and cheese mixtures, had already preheated the oven and pulled out everything we needed to create a spinach lasagna (which we haven't made since the Oscar Party back in February!). So I just hopped in and started helping when I got home, and we got it in the oven in no time. Trouble is, lasagna takes a hour to cook. But in the end, it was worth the wait (and will be a great lunch tomorrow, too - since we have tons of leftovers).
