Two Salads, and a Gift



Last night, we prepped dinner tonight - a pasta salad featuring some tuna, kalamata olives, grape tomatoes, mozzerrella, capers, cucumber and onions. It all marinated over night in a few splashes of olive oil and rice wine vinegar, and I added salt and pepper tonight before serving.



We prepped tonight's dinner ahead of time, because tonight we knew we'd be busy making a lasagne and some fruit salad... but not for us... for one of Dan's coworkers.



He learned recently that his daughter had a serious illness, and is having to undergo difficult treatments. When he shared the news with people at work, they rallied very quickly to help the family out, and set up a calendar where people could sign up to make dinner for the family. Before we left for Hawaii, Dan signed us up for tomorrow.



Dan picked up everything we needed on the way home from work. We used one of the pineapples we brought home from Hawaii, plus fresh strawberries, blueberries, banana and kiwi fruit to make a fruit salad. (We had plenty, so we saved a bit for our own dessert, topped off with a little Cool Whip Lite).



And we made up a big spinach lasagna using our favorite recipe. Tomorrow, Dan will take it all in to his work and store it in the fridge, then run it over to their home in Wallingford after work.
