Krab Melts & Cucumber Salad



Tonight we used up leftover burger buns, and made up some good ol' krab melts. I used some cheddar we picked up at the farmer's market, and added guacamole (also a leftover) to them, too -- in addition to the usual jalapenos.

I also made a cucumber mint salad (Dan's idea). I decided to slice the cucumber using my mandoline to make strips, rather than discs, mostly because I thought it would be more fun to eat. I seasoned it with a little salt, pepper, and sugar, as well as a little white wine vinegar and lemon juice, and I added some scallions that I also made into strips. The results was almost like a little pile of pasta.
