

This week's menu is inspired largely by a) it being the last week before a week+ vacation and b) the food we have leftover in the fridge.
After Dan's Mom's birthday bash Saturday, we have a lot of Mexican ingredients around - so we decided to make Taco Casserole tonight. We used a new, shelf stable taco meat substitute, which was quick and easy to prepare, and used up tomatoes and guacamole left over from the party to garnish.

I also used some limeade and Mexican beer to make 'Beergaritas' for Dan & I to enjoy.
