Triple Chocolate Chip Cookies



This afternoon is my old team's social, and we're celebrating Yarrow's birthday - so I woke up early and whipped up a batch of chocolate chip cookies - making them a little more special by using three types of chocolate chips.

Triple Chocolate Cookies
2 1/2 cups all purpose flour
1 tspn baking soda
1/2 tspn salt
1/2 cup butter
1/2 cup shortening
1 cup brown sugar
1/2 cup granulated sugar
2 eggs
1 1/2 tspn vanilla
1 cup bittersweet chocolate chips
1 cup semisweet chocolate chips
1 cup white chocolate chips

Preheat oven to 375 degrees. Stir together flour, soda and salt. In a mixer bowl beat butter and shortening together on medium speed for 30 seconds. Add sugars and beat til fluffy. Add eggs and vanilla and beat well. Add dry ingredients to beaten mixture, beating until well combined. Stir in chocolate pieces. Using a small ice cream scoop, drop 2 tspn size balls of dough onto a parchment lined baking dish, about 2 inches apart. Bake for 8-10 minutes, until edges begin to brown. Cookies will appear still very soft, but will harden a bit while cooling.
