
A coworker of mine gifted me some great onion tofu, which I added to a classic Aloo Gobi (Indian cauliflower and potatoes) recipe to add more protein. It turned out great.

Since I've made it a mission to eliminate my paper towels use, I've been playing around with ways to deal with oily foods that I would've previously blotted with paper towels. I didn't want to ruin cloth napkins, so I used a strainer and a vegetable steamer - both poised over glass bowls - to allow the extra oil to drain off. This worked much better than paper towels ever did, and eliminates the waste!
