Tonight we had a special Southern meal, with fried chicken and gravy, collard greens, and biscuits. Dan made the biscuits, while I focused on the chicken and greens. It turned out delicious, and was an education for me in how to break down a full chicken we got from SeaBreeze Farm over on Vashon. I used as my reference a great book I picked up at work recently, called simply Knife Skills, which has step by step illustrations on how to cut up just about anything - from breaking down a chicken to making a very pretty pineapple.
