Cashew Chicken



It just wouldn't be a complete week in our house without making something from Quick & Easy Thai Cuisine, so this week we whipped up Cashew Chicken, adding extra cashews, since that's my favorite part. Okay, a LOT of extra cashews.

As we were eating it, it struck me just how much we've learned from this simple, straightforward cookbook... and I remembered it's a series... and I remembered my comment that we don't have a good Chinese cookbook in our collection yet. So after checking in with Dan to confirm it was a good idea, we splurged and spent $10 to order Quick & Easy Enjoy Chinese Cuisine. So hopefully, we'll be whipping up some delicious Chinese recipes soon to share here.
