Tarragon Chicken Salad Croissants



Dan & I watched an episode of Barefoot Contessa, Back to Basics, featuring Ina Garten recently, where she tested 3 recipes, making one version with an ingredient that she feels makes the recipe much better, and one version as a control without that ingredient. Then she sent each of the three over to her assistant and some other ladies to taste test. One of the three recipes was for Chicken Salad sandwiches, testing whether they tasted better with or without tarragon. It came as no surprise that it was unanimous that tarragon made the sandwiches better - but the show made us realize neither of us had really given chicken salad a fair shake, so we vowed to make it for dinner this week.

We found Ina's recipe and used it as our guide - but leaving out the dreaded celery and not bothering to measure anything. Ina's recipe calls for "good mayonnaise", so I made the mayo myself using this recipe.

We enjoyed the finished sandwiches with some green apples Dan brought home - which were perfect. I could've almost chopped some up and put it in the chicken salad.
