Blackened Salmon Quesadillas



For dinner tonight, Dan came up with the idea of salmon quesadillas. We've made quesadillas with shrimp, so we're not afraid of pairing seafood & cheese, and this seemed like a great new option.

I opted to coat one side of the salmon with my usual spice blend (cumin, cayenne, paprika, garlic powder, onion powder, etc) and then blacken that side first, turning and cooking just long enough to cook the fish through. We also cooked up some onion and red pepper, and put all of that together inside flour tortillas with some pepper jack cheese. Topped with some guacamole, and served with red beans & rice, it made a fairly quick, tasty dinner, and there's more than enough for lunch tomorrow.
