Everything I Can Find Risotto

We've been meaning to put risotto on the meal plan for awhile, to make use of the fennel we grew and some leftover sausage in the freezer. I ended up tossing in all sorts of stuff I found in the freezer, including asparagus and peas, and grating in some carrot. I also cut up and tossed the rest of the Spam in with the sausage and fennel while cooking them down. Amazingly, it all melded well together in the creamy, rich goodness of the risotto.
