Making Use of Leftovers & Surplus Eggs



There was still plenty of kalua pig and spam leftover this morning, and buns, so I made up another round of sliders, this time including some with eggs.



I used a trick my old roommate Bill taught me: spray the inside of a coffee mug with nonstick spray, crack in an egg, and cook for about a minute - or until the egg is cooked to desired doneness. It produces a perfect little hockey-puck shaped egg that goes on a bun or english muffin perfectly.



For dinner I made up a frittata using some leftover tortilla chips, many of the odd surplus of eggs we have currently, some kale, carrots & herbs from the garden, some leftover bacon, and whatever else I could find around to toss in.
