Day two of cleaning out the freezer has us dining on the Mancha Mantel leftovers, which I froze when I realized there was way more than we could eat for dinner and lunch the next day. Paired with some tortilla chips, it heated up perfectly in the microwave (I always choose a long time at a low power setting to ensure it heats through evenly), and had even more flavor than the first night.
