Asparagus & Pancetta Ravioli with Pomodoro Sauce



Tonight we made a quick & easy dinner again - this time premade Asparagus and Pancetta Ravioli with Pomodoro Sauce from La Pasta in the Wedgewood area, which we bought at the market last Saturday frozen. After six minutes in boiling water, and a little time on the stove for the sauce, it was ready.

We also have a huge head of lettuce we're trying to work through before it goes bad, so Dan had the idea to pair the pasta with a salad. I made a simple salad dressing made with a little left over creme fraiche from Sea Breeze Farm, adding minced garlic, salt, pepper, onion powder, and grated italian hard cheese to create a Caesar-esque dressing. Then I drizzled that over torn up lettuce, some chopped tomato, and added some sunflower seeds and bacon bits.
