A Week of Favorites: Meatloaf



When we did our meal planning on Thursday, Dan suggested we take a week off from getting up early on Saturday morning and going to the Farmers Market, and give ourselves permission to sleep in this weekend. To go along with that, he also suggested we keep dinners this week simple by doing a week of favorites - familiar comfort foods we've made many times before.

We kick off this week with a variation on the Meatloaf recipe from Cheap & Easy: A Cookbook for Girls on the Go that we've made several times. This version we've made using 1 lb of ground pork mixed with 1/2 lb of sausage from Skagit River Ranch. And I added a few squirts of Worcestershire sauce to the mix, as well.

Easy Meatloaf
1 1/2 lbs ground beef, turkey, pork (or any combination)
3/4 cup bread or cracker crumbs
1 large egg, beaten
1 1/4 tspn salt
1 tspn pepper
3/4 cup catsup (or any combination of sauces, like mustard, Sriracha, soy sauce, etc)
2 Tbspn brown sugar
1 small onion, minced
2 tspn garlic powder

Preheat oven to 350 degrees F. In a large mixing bowl, combine all the ingredients. Mix with your hands until well combined. Transfer mixture to a loaf pan, or place on a baking sheet and free-form a loaf. Bake for 1 hour, then let stand for 5 minutes before slicing and serving.
