Spinach Lasagna w/ Garden Fresh Broccoli



Dan has been craving lasagna ever since we made a batch for his coworker's family a couple weeks back. So tonight we whipped up a spinach lasagna using our standard recipe. We're starting to memorize it, so maybe we need to try mixing it up. Perhaps some extra veggies inside? Or we could make our own ricotta style cheese to use? We did mix it up a bit by having some garlic bread with it.



But more exciting than the lasagna tonight was the fact that we made our first dinner that used something we harvested from Dan's garden. It's just a small patch on the side of the house, but he's been growing tomatoes, squash, cucumbers, peppers, basil, carrots, and broccoli. The broccoli has been incredibly successful, and we almost missed the window of opportunity to harvest the tops before they flowered. But we caught them just in time, and blanched them and then tossed them in a saute pan with some melted butter. It felt great to be eating something we grew ourselves!
